Vegetable Fried Rice

Vegetable fried rice is one of the favourite recipe to everyone. This is very easy to prepare for school going kids during busy morning, and a very good nice lunch box recipe. Nowadays kids eats selective vegetables. In-order to avoid this, we can prepare this vegetable fried rice. It is a good way to use all the vegetables.

 

Vegetable is otherwise known as intended for cooking or eating raw. The main ingredients used are carrot, beans, cabbage, bell pepper and mushroom. All the vegetables contains lot of nutritions. Voltaire  French philosopher said “The art of medicine consist of amusing the patient while Nature cures the disease”.

 

 

Carrot is rich in alkaline elements which purify and revitalize the blood. It also has a reputation as a vegetable that helps to maintain good eye sight. Next about beans, fresh green beans are always tasty with no saturated fat. They are very low in calories and contain vitamins and minerals.
 
Some of the health benefits of cabbage are: 1)contains full of vitamin K and anthocyanins that helps with mental function and concentration. 2)The high content of vitamin C and sulphur in cabbage removes toxins. It is consider as Russia’s national food. They eat seven times as much cabbage as the average Americans. 
 
Then comes Bell Pepper also known as sweet pepper or a pepper in European countries. In asian countries they are called as capsicum.It contains good level of vitamin A. Many colours of pepper such as green, red and yellow are available in the market.
I want to tell about benefits of mushroom. It is important to eat only organically grown mushrooms because they absorb and concentrate whatever they grow in good or bad. Some of the health benefits are increased level of vitamin D, improved immune system function,improved nutrition.

 

You can use any kind of vegetables you like to make this recipe. Ok now come preparation method.

 

Ingredients:

  • Basmathi Rice  – 500 gms
  • Carrot – 1Beans – 25 gms
  • Cabbage – 25 gms
  • Bell pepper / Capsicum -1
  • Mushroom – 25 gms
  • Garlic – 5 pieces
  • Big onion – 1
  • Green Chillies – 4
  • Pepper powder – 1 Tbs
  • Soy sauce –  1 Tsp 
  • Ajinomoto – 1/4 Tsp
  • Coriander Leaves – 1/4 bunch

 

Method:

  • Wash the Basmathi rice and boil it in the pressure cooker. Pour  11/2  water for 1 cup rice. 
  • Add little oil  so that it wont be sticky when we drain. 
  • Close the cooker and let  1 whistle comes out .
  • Then open and drain the water and keep aside.
  • Now take a Non stick pan or Kadai  pour oil, add finely chopped garlic,green chillies, onion and fry well.
  • Once the onion becomes brown colour, add chopped beans, carrot, cabbage, Bell pepper (any colour) and then finally chopped mushroom, salt.
  • Fry all the above well without adding water.
  • Once the vegetables cooked, pour  little soy sauce  (Dont add too much it will not be nice).
  • It is not necessary to boil the vegetables well for fried rice. (Cook 3/4 ).
  • Then add few Ajinomotto and pepper powder and mix the boiled rice with this.
  • Stir well and garnish with coriander.
