White / Vellai Paniyaram

Vellai Paniyaram is a very famous chettinad recipe,which is well known through out the world.They used to prepare for functions and during special occasions.The best combination with this  is Milagai / Red chilly chutney. It ‘s like a fluffy pillow snack which can be served as morning breakfast or for evening snacks also.Even kids like this snack.As it contains rice and dhal, its good for kid’s health.
I’ve learnt this recipe from my mother- in- law. I have tasted this snack in her native place during on a special functions like marriages, temple functions, family gatherings. Initially  i thought it would be a big process and cannot prepare easily.But she motivated me to do. A big thanks to her.


The ratio of rice and dal must be noticed. It should be in correct ratio otherwise it will become like vadai.


  • Raw Rice  – 1 Cup 
  • Urud Dhal –  1/4 cup 
  • Salt to taste
  • Oil for frying



  • Wash and soak the Raw rice and Urud Dhal together for atleast 1 hour.
  • Then grind it in a grinder to get a very smooth paste.
  • The batter should be watery than the Dosa batter.
  • Add salt and mix well.
  • Some would like to add little milk as well.
  • Take a round ladle and stir well.
  • Now take a frying pan and pour oil. Keep the flame in medium.
  • Make sure the oil must not be overheated.
  • Now beat the batter with round ladle and pour in the oil.
  • Now the paniyaram will rise up and with the help of ladle turn it upside down.
  • It has to rise on its own and float .Now we can remove from oil.
  • Serve with hot Miliagai Chutney.


Sometimes we think that it drinks lot of oil, in that case we can add little idli batter or rice flour.
